Macaroni salad is a wonderful side dish that is mostly popular during summertime barbecues. It’s also very popular at Puerto Rican family get togethers. You can add any variations of vegetables you’d like or switch out the mayonnaise for Ranch dressing to make it your own. Either way this is a showstopper at any party or on a lazy Sunday afternoon.

Ingredients
½ pound cooked elbow macaroni
½ cup of mayonnaise
½ teaspoon of adobo all-purpose seasoning
6 oz chopped celery
8 oz chopped ham
1 chopped red pepper
Directions
- Cook pasta according to package directions and cool completely.
- Add pasta to a large mixing bowl and coat pasta well with mayonnaise
- Add ½ teaspoon of adobo and stir to incorporate with pasta
- Add celery, ham and red pepper and stir until well incorporated
- Chill in refrigerator for at least six hours or overnight so ingredients are cooled
- Serve
