This is a great recipe that is light yet filling. It could be a great addition to anyone’s summertime menu with its light and fresh flavors.

Ingredients:
One turn of olive oil
1 lb. angel hair pasta cooked according to the package directions
8 ounces of cherry tomatoes
9 ounces of fresh spinach
2 cups of vegetable broth
2 1/2 tablespoons minced garlic
2 1/2 tablespoons Italian seasoning
2 tablespoons onion powder
Directions
- Set the heat on the stove to medium high.
- In a 5-6 quart stock pot, add one turn of olive oil to cover the bottom of the pot.
- Add tomatoes , garlic, Italian seasoning and onion powder. Add about two tablespoons of the vegetable broth and stir. Cook delete cover and stir on medium heat for 8 to 9 minutes stirring occasionally.
- Use a cooking spoon to break down tomatoes and add one cup of the vegetable broth and spinach.
- Stir mixture to bring garlic and spinach to the top of the pot
- Add pasta and stir gently to incorporate mixture.
- Add remaining cup of broth and lower the heat to medium.
- Cook for 15 to 20 minutes until ingredients are heated and the spinach is wilted
- Serve
Add parmesan cheese has garnish if desired
